Hi Reader, I recently spent the morning walking through avocado groves in Ventura County with California Grown, and let me tell you, it made me appreciate a good California avocado even more. We visited Kimball Avocados in Santa Paula, a family-run ranch tucked into the hillsides, where Rachael Kimball Laenen shared the care, patience, and work that goes into growing their beautiful Hass avocados. Of course, after seeing all those buttery avocados on the trees, I came home craving one thing: This is not guacamole. It’s smoother, tangier, and made for drizzling over tacos, taquitos, burrito bowls, eggs, grilled vegetables, or honestly, anything that needs a creamy green sauce. Look for the California Grown sticker when buying produce to make sure you are getting the highest quality avocados, fruit, nuts, flowers, wine... you get the picture.

Hi Reader, Pollo Con Crema is one of those Mexican dishes that proves a one-pan, 30-minute chicken dish can also taste incredible! The key is building each layer: browning the chicken, softening the poblano and jalapeño, and finishing the sauce gently with real dairy so it stays creamy, smooth, and balanced. My version uses Real California Milk dairy products for a rich sauce that never feels too heavy. Mexican Pollo Con Crema Chicken Recipe Get the recipe This post is sponsored by Real...
Hi Reader, Can I tell you a little secret? I almost didn't share today's recipe. Coconut... in ceviche? It sounded a little too unexpected, and I wasn't sure anyone would go for it. But the more I made it, the more I loved it. The creamy coconut milk mellows the bright lime just enough, while the shrimp stays fresh, tender, and full of flavor. Piled onto crispy tostadas with creamy avocado, it's become one of my favorite summer meals. Funny how the recipes I hesitate over the most often...
