I almost didn't publish this recipe...

Hi Reader,

Can I tell you a little secret?
I almost didn't share today's recipe.

Coconut... in ceviche? It sounded a little too unexpected, and I wasn't sure anyone would go for it.

But the more I made it, the more I loved it. The creamy coconut milk mellows the bright lime just enough, while the shrimp stays fresh, tender, and full of flavor. Piled onto crispy tostadas with creamy avocado, it's become one of my favorite summer meals.

Funny how the recipes I hesitate over the most often become the ones I can't stop making.

If you're looking for something cool, refreshing, and perfect for summer, I hope you'll give this one a try.
