A comal is a round griddle that is the workhorse of any Mexican home kitchen. It’s perfect for making tortillas (or warming them), toasting chiles or charring onions and peppers.

Any Mexican food lover should try making homemade tamales at least once, and it is so much easier with the right equipment. Having a large vaporera or tamales-steaming pot is a must.
